Ever wondered what’s it all about in the kitchen of a 5 star hotel?  Well we do things a little bit differently; gone are the 90hr weeks or 5 back to back double shifts- we love fun dining not fine dining.  Hartnett Holder & Co is our award-winning Italian restaurant; we buy the very best fresh seasonal ingredients and cook and prepare them in an Italian way. The team is led by internationally acclaimed Chef Director Angela Hartnett and Head Chef Luke Holder, who both bring with them a wealth of knowledge, passion and Italian flair to our open-house kitchen – we actively encourage our guests to meet the chefs and to be a part of the ‘behind the scenes’ action!

You will be led by a team that  genuinely care about your work life balance, whether you have a family or hobbies, we aim to give you the best of both worlds through a 3 ½ day off rota provided 3 months in advance, with annual leave accommodated every 3-4 months.  Our kitchen is full of natural light with doors opening out directly onto the hotels stunning grounds, a long-way away from big city small kitchens!

We are passionate about growing and developing our chefs by sharing expertise and supporting you through the process of gaining nationally recognised qualifications.  We will expose you to some of the industry’s top chefs and restaurant teams, with external training, work shadowing and short-term placements, and with our own series of Pop Up restaurants, hosted by some of the biggest names in the chef world including Rick Stein, Phil Howard, Tom Kerridge, Mark Hix, Michel Roux Jr and many more.

Here at Hartnett Holder & Co we don’t get hung up on trying to be the best restaurant in the world, we just want to be everybody’s favourite and working here is no different. You would be joining a team where passion and drive are a big deal, come and learn what we do, how we do it and have fun in the process.

Experience at a high level is great although not essential- but being ambitious and driven is!
